Raw Vegan Vegetables

For the Salad


1 cup shredded carrots

1  cup shredded celery

1 cup white mushrooms, halved

1 bunch string beans

1  burdock root, shredded

1 head purple or white cauliflower, break of florets

1 tablespoon black sesame seeds

1 tablespoon white sesame seeds


Wash, cut and soak the burdock root for about 10 min in cold water .

Meanwhile, prepare the other vegetables .

Then, drain burdock root (putting them in a strainer ).

Combine all of the ingredients in a large mixing bowl.


For the Dressing


1/3 cup Ume vingar

1/3 cup liquid aminos

1 big clove garlic, minced

1 tablespoon finely grated ginger

1/4 cup sesame oil


In a small mixer, combine all of the ingredients and blend till smooth .

Pour dressing over salad, as much dressing as you desire and enjoy immediately .

Keep leftover dressing in an air tight container for 3 days in the refrigerator.
