Raw Vegan Mayonnaise

 

1 1/4  cups cashew nuts

3/4 cup water

2 teaspoons salt

2 lime, juiced

3 teaspoons olive oil

 

 

Blend all the ingredients in a food processor into a creamy, smooth mayonnaise.

Add as much water as needed till you reach your desired consistency.

Can be kept stored in an air tight glass container for 5 days in the refrigerator.
