Raw Vegan Mashed “Potatoes” with Raw Vegan Mushroom Gravy

For the Mashed “Potatoes”

2 and 1/2 cups cauliflower

1/4 cup  macadamia nuts

1/4 cup olive oil

1/2 teaspoon sea salt

nutmeg and black ground pepper to taste

 

In a food processor, ground the macadamia nuts and the cauliflower.

Then add olive oil and salt .

Combine all the ingredients until the texture looks very fluffy.

Top with nutmeg and black ground pepper

 

For the Mushroom Gravy

1/3 cup coconut water

1/3 cup water

2 cups white mushrooms

1 tablespoon tahini

1 glove garlic

2 tablespoon fresh lemon juice

2 tablespoon Tamari Soy sauce

1 stalk celery

1/2 carrot

1 tablespoon chopped onion

1/2 red bell pepper

3/4 teaspoon sea salt

 

In a high speed blender, combine all the ingredients and blend until smooth .
