Raw Vegan Mango Avocado Pasta

2 fresh mangos

1/4 avocado

1 bunch coriander

1/4 cup spring onion

1/4 teaspoon cayenne pepper

1/4 teaspoon salt (optional )

4 or more zucchini (depending on how much sauce you like)


In a high speed blender, combine all of the ingredients, except the zucchini noodles, and blend until they are smooth. Using a spiralizer make thin spaghetti noodles from the zucchini .Put the zucchini noodles in a serving bowl, pour the sauce over them, mix well and serve.

If you prefer a softer texture noodle, let the zucchini noodles to sit in the open air at room temperature 6-8 hours.
