3 cups raw cashew nuts and pure water to soak.
3/4 cup lime
1/4 cup raw coconut oil
1/4 cup agave syrup (more if you prefer sweeter)
1 teaspoon vanilla aroma
OR vanilla oil essence, you need to start with 2 drops and taste since oils are more concentrated and intense in flavour.
1/2 cup pitted dates
2 cups raw walnuts
Soak cashews for 8 hours in pure water.
Then let cashews drain in a strainer.
Meanwhile make the raw dough.
Using a food processor, add walnuts and dates and pulse until well combined.
Using your hands, spread the raw dough in to a spring form and set aside.
Making the Lime filling
Squeeze the lime.
In the food processor combine now the cashews, lime, vanilla,agave syrup and coconut oill
Transfer the lime cheese to prepared spring form and freeze for at least 8 hours or overnight.
When ready to serve, decorate your cake.
The cake tastes good half frozen or defrosted for more than 30 minutes.
