1 cup pecans, soaked for 8 hours
1 cup almonds, soaked for 8 hours
1 cup walnuts, soaked for 8 hours
1 cup goji berries, soaked for 8 hours
1/2 cup raisins
3 tablespoons carob powder
3 tablespoons chocolate nibs
To form the skeleton skulls :
2 tablespoons ground flaxseed
Wash and drain the nuts and berries.
In a food processor, combine all of the ingredients and process until smooth, stopping occasionally to scrape down the bowl with a rubber spatula.
Place the dough in the refrigerator for a few hours or over night before forming. Gently roll the truffle dough into balls first, using as little ground flaxseed as needed, then shape the skeleton skulls by hand.
Use the top of a chopstick to make the eyes and the top of a teaspoon to make the mouth.
Will keep for one week in the refrigerator.
