Jack O’Lantern Dough
1 cup rolled oats
½ cup dried apricot
½ cup grated dry unsweetened coconut
1 cup dried banana chips
1 tablespoon agave syrup
2 teaspoons coconut oil
1 teaspoon vanilla extract
In a food processor, add the oats, and pulse to break the oats down slightly.
Then combine all of the other ingredients, except the apricots and pumpkin seeds you will need for the decoration.
Process until smooth, stopping occasionally to scrape down the bowl with a rubber spatula.
Using a piping bag, fill up your Jack O’Lantern shape tray and let it rest for one hour or over night in the refrigerator.If you don’t have either of the two, you can use your hands to form balls.
To make the decoration
Remove them from the tray. Then, with a sharp thin knife cut the apricots into halves. Place each half apricot on one pumpkin and again using a very sharp thin knife cut eyes and mouth .
Will keep in the refrigerator for one week .
