Raw Vegan Goji Berry-Cacao Nibs Cookies

2 1/2 cups almond meal

1/2 teaspoon salt

1/2 cup agave syrup

1/4 cup water

1/2 cup goji berries

1/2 cup cacao nibs


Combine all the ingredients in a food processor, pulse. Make sure the dough doesn’t get too soft .

If you don’t have a food processor simply mix all the ingredients together in a large mixing bowl.

Use an ice-cream scooper to portion the dough onto the mesh screen of your dehydrator trays.

Dehydrate at 41 degrees celsius /104 degrees fahrenheit for 6 to 24 hours, or to your desired consistency.

Tastes goods straight from the dehydrator, and even more delicious after being stored a few hours in the refrigerator .

Can be stored in the fridge for one week .
