Raw Vegan Coconut Moons

For the cake

1 cup almonds

1 cup pecans

1 cup dried bananas

3 cups pitted dates

1 vanilla bean, scraped  OR 1 teaspoon vanilla essence

 

For the outside

2 cups finely shredded coconut

 

In a food processor, finely chop almonds, pecans and dried bananas.

Slowly add dates and vanilla and process until smooth.

Mold dough into a “Rehrücken Cake Shape ” and let it rest for a few hours in the refrigerator .

Then, take the cake out of the mold and cut into individual pieces.

Cover each piece with shredded coconut .

Will keep in the refrigerator for one week.
