Raw Vegan Carrot Pasta

For the Noodles

6 carrots

For the Dressing

4 teaspoon finely grated ginger

1/4 cup Tamari Soy Sauce

1/4 cup lemon juice

2 tablespoon olive oil

1 tablespoon sesame oil

2 tablespoon Tahini

1 big clove garlic, minced

For the Topping

1 tablespoon black sesame seeds

1 tablespoon white sesame seeds

1/4 cup Nori flakes (dried seaweed)

Using a spiraliser to make the noodles, transfer into a serving bowl.

In a small blender, combine all the ingredients till smooth. (The dressing will keep well for 3 days in the refrigerator)

When ready to serve pour the dressing over the carrot noodles, and top with sesame and Nori.
