For the salad
1 head curly kale
6 sun dried tomatoes
1 tablespoon fresh spearmint
1 tablespoon fresh dill
1 tablespoon fresh chives
Remove stems of curly kale.
Soak salad in water with ice cubes for 15 min.
Meantime prepare herbs.
Using scissors, cut sun dried tomatoes into julienne.
Then move leaves into a colander and let excess water drain.
Alternatively use paper towels or a salad spinner to dry them.
1/2 lime, juiced
2 tablespoons sesame oil
1/2 teaspoon pink himalayan salt
1/4 teaspoon chilly powder
pinch black pepper
pinch coconut sugar
In a salad bowl, mix ingredients well .
When ready to serve, combine dressing , herbs, sun dried tomatoes and salad .
